Everyone loves banana bread, especially in the duck blind or out on the lake! Let's face it, this is not exactly some "new secret" recipe. Banada bread is basically banana bread. It has bananas, flour and eggs... but I like this recipe because it's easy and always turns out awesome!

Ingredients

1/2 cup butter (or if you're a cheap-ass like me, use margarine)
1 cup sugar
2 eggs
1/2 tsp salt
1 tsp baking soda
2 cups flour, all purpose is fine
3 - 4 very ripe bananas, even those old raunchy black ones...
3/4 - 1 cup of finely chopped walnuts or pecans

Okay, let's go...

In a large bowl, with a mixer, cream together butter and sugar. Add the eggs and beat them up too. Sift dry ingredients together and slowly mix it in. Mash the bananas up a bit, then add them with the nuts and blend. Don't worry about little lumps of banana... just call it "rustic." If someone complains, tell them to kiss your ass.

Pour the mixture into a well greased and floured loaf pan and bake at 325 F for about 1 hour and 20 minutes. Then, do the 'ol toothpick test to check for doneness. Should pull out clean and dry.

Important - Don't worry if the top of the loaf cracks... It'll just look rugged this way and then you can serve it in the duck blind without your buddies teasing you! Actually, if you want to this banana bread to be rugged for real... just add 1/3 cup of sand or fine gravel to the recipe.

Makes 1 loaf

Sand?

The bread looks good but I'm not that thrilled with quartz and feldspar in my food.

added the sand

Well I certainly did add the sand how else would it be totally rugged. It is special sand though off the east coast beach of Lake Huron, thus being good clean sand and full of rainbow flavor. I'll send some to let you try for yourself. have a good one and talk to you soon.
